Cool cucumber and herbed cottage cheese make these four wraps crisp, creamy, and easy to assemble. Choose large flour tortillas or spinach wraps, then add the optional vegetables that suit the meal. The filling is mixed in one bowl, so the wraps come together without cooking.
Ingredients for 4 wraps
- 4 large flour tortillas or spinach wraps
- 1 cup non-fat cottage cheese
- 1 medium cucumber, thinly sliced or julienned
- 1/4 cup finely chopped red bell pepper, optional
- 1/4 cup chopped fresh dill or parsley
- Salt and pepper, to taste
- 1 tablespoon lemon juice or white wine vinegar
- 1/2 teaspoon garlic powder or 1 small minced garlic clove, optional
- Optional add-ins: baby spinach, shredded carrots, or sliced avocado
- Optional for crunch: sunflower seeds or sliced almonds
Assemble the wraps
- In a medium bowl, stir together the cottage cheese, lemon juice or vinegar, garlic if using, chopped herbs, salt, and pepper.
- Lay out the tortillas. Spread one-quarter of the cottage cheese mixture in the center of each wrap.
- Top each with cucumber and the optional red bell pepper. Add baby spinach, shredded carrots, avocado, sunflower seeds, or sliced almonds if desired.
- Fold in the sides, then roll each tortilla tightly like a burrito.
