Banana slices sandwich a layer of peanut butter, then a half-dip in dark chocolate turns them into bite-size frozen treats. Coconut oil is melted with the chocolate to create the coating.
The recipe takes about 10 minutes to assemble and two hours to freeze in two stages. It makes 12 servings. Keep the banana slices similar in thickness so the sandwiches stack neatly and freeze at the same rate.

- 2 bananas, sliced
- ¼ cup peanut butter
- ½ cup dark chocolate chips
- 1 tsp coconut oil
Instructions
- Arrange the banana slices in pairs.
- Spread peanut butter on one slice from each pair, then top with the matching banana slice to make a small sandwich.
- Place the banana sandwiches in the freezer for one hour.
- Melt the dark chocolate chips with the coconut oil and stir until smooth.
- Dip each frozen bite halfway into the melted chocolate.
- Return the coated bites to the freezer for another hour.
- Serve frozen.
Freeze in Two Stages
Place the assembled bites on a lined tray before the first freeze so they lift away cleanly. Use only a thin layer of peanut butter; too much can squeeze out when the second banana slice is added. The first hour in the freezer firms the sandwiches and makes them easier to dip without sliding apart.
Stir the coconut oil through the chocolate until the coating is uniform. Dip only half of each bite, as directed, leaving an uncovered section to hold. Allow excess chocolate to drip back into the bowl before returning the bite to the tray.
After the second hour of freezing, transfer the bites to a covered freezer-safe container. If stacking them, place a liner between layers so the chocolate surfaces do not stick together. Banana softens quickly at room temperature, so remove only the amount you plan to serve and return the rest to the freezer.
