Tender cinnamon-nutmeg apples fill four crisp whole-wheat tortillas in these dessert quesadillas. The apples cook for 5–7 minutes, then the folded tortillas brown for 2–3 minutes on each side.
Ingredients
- 2 small apples, peeled, cored, and thinly sliced
- 1 tablespoon unsalted butter
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 tablespoon brown sugar substitute, such as Swerve Brown Sugar
- 4 small whole-wheat or low-carb tortillas
- Cooking spray
- Powdered sugar substitute, for optional dusting
Instructions
- Melt the butter in a skillet over medium heat.
- Add the apples, cinnamon, nutmeg, and brown sugar substitute. Cook, stirring occasionally, for about 5–7 minutes, until tender. Set aside.
- Divide the apple mixture among the tortillas, placing it over one half of each. Fold into half-moons.
- Coat a clean skillet or griddle lightly with cooking spray and heat over medium.
- Cook the quesadillas for about 2–3 minutes on each side, until golden and crisp.
- Cool for 1 minute, cut each quesadilla in half, and dust with powdered sugar substitute if desired.
The recipe makes four whole quesadillas, or eight halves. Serve them while the tortillas are crisp and the apple filling is still warm.
