4 small low-carb tortillasor whole wheat tortillas
1 cup cooked ground turkey (93% lean) or lean ground beef
1 packet taco seasoning (low sodium, or homemade)
1/2 cup fat-free refried beans
1/2 cup diced tomatoes
1/2 cup reduced-fat shredded Mexican cheese
1/4 cup sugar-free taco sauce or salsa
2 tablespoons fat-free sour cream (optional)
1 tablespoon chopped green onions (for garnish)
1 tablespoon chopped cilantro (optional)

Instructions:
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cook the ground turkey or beef in a skillet over medium heat until browned, about 6-8 minutes. Drain any excess fat. Add the taco seasoning and a little water according to the packet instructions. Let simmer until fully coated.
Crisp the tortillas:
Spray both sides of the tortillas lightly with cooking spray.
Place them on the prepared baking sheet and bake for 5-7 minutes until crisp. Flip halfway for even crispness.
Assemble the pizzas:
Spread a thin layer of refried beans on each tortilla.
Top with the seasoned meat mixture.
Sprinkle a layer of shredded cheese on top.
Add a second tortilla on top (optional) for a true layered pizza, or skip for a single-layer version to save points.
Bake the pizza for another 5-7 minutes until the cheese melts.
Top with taco sauce or salsa, diced tomatoes, green onions, and cilantro.
Serve warm with a side of sour cream if desired.

Use Greek yogurt as a sour cream substitute for extra protein.
Add toppings like jalapeños, olives, or a sprinkle of avocado for added flavor (adjust points).
