Ingredients:
1 pound (500 g) asparagus, trimmed
3 tablespoons olive oil
1 tablespoon minced garlic
3/4 teaspoon salt
1/4 teaspoon black pepper
1 1/4 cups shredded mozzarella
Directions:
1. Preheat oven to 425°F (220°C) and grease a baking sheet with cooking spray.
2. Place asparagus in a single layer on the sheet.
3. Combine olive oil, garlic, salt, and black pepper in a bowl. Drizzle over asparagus.
4. Roast for 10-15 minutes until slightly tender.
5. Sprinkle mozzarella over asparagus and broil until cheese is melted and bubbly.
6. Adjust seasoning and serve immediately.
