Chocolate Nut Clusters

Chocolate nut clusters are a straightforward no-bake treat built around two main ingredients: mixed nuts and melted chocolate. The nuts bring crunch, while the chocolate holds each spoonful together as it chills. Optional coconut oil makes the melted chocolate mixture smoother and easier to stir.

Use almonds, peanuts, pecans, or a combination. Line the baking sheet before melting the chocolate so the coated nuts can be portioned immediately.

Ingredients

  • 2 cups mixed nuts, such as almonds, peanuts, or pecans
  • 1 1/2 cups chocolate chips, dark, milk, or semi-sweet
  • 1 teaspoon coconut oil, optional, for a smoother texture

Instructions

  1. Line a baking sheet with parchment paper and clear enough refrigerator space for the sheet to sit level.
  2. Place the chocolate chips and optional coconut oil in a microwave-safe bowl.
  3. Melt the chocolate in 30-second intervals, stirring between each interval. Stop when the remaining small pieces can be stirred smooth rather than continuing to heat.
  4. Add the mixed nuts to the melted chocolate. Stir until the nuts are evenly coated and no dry pockets remain.
  5. Drop spoonfuls of the mixture onto the parchment paper, leaving a little room between the clusters.
  6. Chill in the refrigerator for 30 minutes, or until the chocolate is set.
  7. Transfer the clusters to an airtight container for storage.

Melting and Portioning Tips

Short microwave intervals give better control and reduce the chance of scorching the chocolate. Stir thoroughly each time because the chips can retain their shape even after they have softened. Make the spoonfuls similar in size so they set at roughly the same pace.

If stacking the clusters in their container, place parchment between the layers to help prevent sticking.
