Ingredients:
● 2 medium zucchinis, grated
● 1 cup fresh spinach, finely chopped
● ½ teaspoon salt
● 1 egg
● ½ cup non-fat crumbled feta cheese
● ¼ cup non-fat grated Parmesan cheese
● ⅓ cup breadcrumbs
● 2 cloves garlic, minced
● ½ teaspoon dried dill
● Freshly ground black pepper to taste
● Olive oil for frying
Directions:
I. Place grated zucchini in a clean towel and squeeze out as much moisture as possible.
II. In a large bowl, combine zucchini, chopped spinach, egg, feta, Parmesan, breadcrumbs, garlic, dill, and black pepper. Mix well.
III. Shape mixture into small patties using your hands.
IV. Heat a little olive oil in a skillet over medium heat. Cook the patties for about 3–4 minutes per side, or until golden brown and crispy.
V. Transfer to a paper towel-lined plate. Serve warm with lemon wedges and your favorite yogurt dip or tzatziki.
