These two to three crustless pizza bowls layer seasoned ground meat, sautéed vegetables, marinara, mozzarella, and Parmesan in oven-safe ramekins. A 10–12-minute bake melts the cheese after the skillet filling is cooked.
Ingredients
- 1 tablespoon olive oil
- 1/2 cup each chopped onions and green bell peppers
- 1 cup sliced mushrooms
- 2 garlic cloves, minced
- 1 pound ground beef or ground turkey
- 1/2 teaspoon Italian seasoning
- Salt and pepper, to taste
- 1 cup no-sugar-added, low-carb marinara sauce
- 1 1/2 cups non-fat shredded mozzarella
- 1/4 cup non-fat grated Parmesan
- 1/4 teaspoon crushed red pepper flakes, optional
- Fresh chopped basil or parsley, for garnish
Directions
- Preheat the oven to 400°F (200°C). Prepare 2–3 oven-safe ramekins or small baking dishes.
- Heat the oil over medium. Sauté onions, peppers, and mushrooms for 4–5 minutes; add garlic for 1 minute.
- Push vegetables aside and cook the meat with Italian seasoning, salt, and pepper. Beef should reach 160°F (71°C); turkey should reach 165°F (74°C). Drain excess fat if needed.
- Stir in marinara and simmer 2–3 minutes. Divide among ramekins; top with mozzarella, Parmesan, and optional pepper flakes.
- Bake on a sheet for 10–12 minutes, until bubbly and golden in spots. Cool slightly, garnish, and serve hot.
