Crustless Pizza Bowls

These two to three crustless pizza bowls layer seasoned ground meat, sautéed vegetables, marinara, mozzarella, and Parmesan in oven-safe ramekins. A 10–12-minute bake melts the cheese after the skillet filling is cooked.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup each chopped onions and green bell peppers
  • 1 cup sliced mushrooms
  • 2 garlic cloves, minced
  • 1 pound ground beef or ground turkey
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup no-sugar-added, low-carb marinara sauce
  • 1 1/2 cups non-fat shredded mozzarella
  • 1/4 cup non-fat grated Parmesan
  • 1/4 teaspoon crushed red pepper flakes, optional
  • Fresh chopped basil or parsley, for garnish

Directions

  1. Preheat the oven to 400°F (200°C). Prepare 2–3 oven-safe ramekins or small baking dishes.
  2. Heat the oil over medium. Sauté onions, peppers, and mushrooms for 4–5 minutes; add garlic for 1 minute.
  3. Push vegetables aside and cook the meat with Italian seasoning, salt, and pepper. Beef should reach 160°F (71°C); turkey should reach 165°F (74°C). Drain excess fat if needed.
  4. Stir in marinara and simmer 2–3 minutes. Divide among ramekins; top with mozzarella, Parmesan, and optional pepper flakes.
  5. Bake on a sheet for 10–12 minutes, until bubbly and golden in spots. Cool slightly, garnish, and serve hot.
