Cheeseburger Casserole

This cheeseburger-inspired casserole combines seasoned ground beef and onion with mayonnaise, ketchup, mustard, and sharp cheddar. It makes six servings.

Ingredients

  • Olive-oil cooking spray
  • 2 tablespoons olive oil
  • 2 pounds extra-lean ground beef
  • 1 medium onion, finely chopped (about 6 ounces)
  • 2 teaspoons coarse kosher salt
  • ¼ teaspoon black pepper
  • 1 tablespoon minced garlic
  • ¼ cup avocado-oil mayonnaise
  • ¼ cup unsweetened ketchup
  • 1 tablespoon mustard
  • 1½ cups shredded sharp cheddar (6 ounces), divided

Instructions

  1. Preheat the oven to 400°F. Coat a 2-quart baking dish with olive-oil cooking spray.
  2. Heat the olive oil in a large skillet over medium-high heat for about 2 minutes.
  3. Add the ground beef and onion. Cook for about 5 minutes, stirring to break up the beef, until the onion is soft and the beef reaches 160°F (71°C).
  4. If liquid remains at the bottom of the skillet, drain the mixture and return it to the skillet.
  5. Stir in the kosher salt, black pepper, and garlic. Cook, stirring, for 1 minute.
  6. Turn off the heat. Stir in the mayonnaise, ketchup, mustard, and 1 cup cheddar.
  7. Transfer the mixture to the prepared dish and sprinkle with the remaining ½ cup cheddar.
  8. Bake for about 15 minutes, until the cheese is melted and the center reaches 165°F (74°C).

Broiler option

If the baking dish is broiler-safe, broil the casserole about 6 inches below the heating element for 1–2 minutes instead of baking, until the cheese melts. Confirm that the center reaches 165°F (74°C).

Makes 6 servings.

Storage

Refrigerate cooled leftovers in a covered container and use within 4 days.
