Ingredients:
6 eggs
3/4 cup milk
1/2 cup diced bell peppers (any color)
1/2 cup chopped mushrooms
1/2 cup reduced-fat shredded mozzarella or cheddar
1/4 cup diced onion
1/2 tsp Italian herbs
Salt & pepper to taste
Directions:
Preheat oven to 375°F (190°C). Grease a 9-inch square or round baking dish. In a bowl, beat eggs with milk. Stir in all veggies, herbs, cheese, salt, and pepper.
Pour mixture into dish. Bake for 30–35 minutes until center is firm and top is golden. Let rest 5 minutes before serving.
