Avocado Salsa Grilled Chicken

Lemon, honey, garlic, and olive oil form the quick marinade for this grilled chicken. A fresh avocado, tomato, and herb salsa is prepared while the chicken marinates, then mozzarella is added as soon as the chicken leaves the grill. The recipe makes four servings.

Ingredients

  • 1/4 cup fresh lemon juice
  • 1/4 cup raw honey
  • 4 fresh garlic cloves, minced
  • 2 tablespoons olive oil
  • Sea salt and pepper, to taste
  • 4 boneless, skinless chicken breasts, about 1 1/2 pounds
  • 4 slices non-fat mozzarella cheese
  • 1 large ripe avocado, diced
  • 2 medium tomatoes, diced
  • A small handful fresh chopped basil or cilantro

Instructions

  1. Whisk the honey, lemon juice, garlic, olive oil, sea salt, and pepper in a medium glass bowl.
  2. Add the chicken and turn it to coat. Cover and marinate in the refrigerator for about 30 minutes.
  3. For the salsa, combine the diced avocado, tomatoes, basil or cilantro, and salt and pepper to taste in a small bowl. Set aside.
  4. Heat the grill to medium-high. Remove the chicken from the marinade and grill for about 5–6 minutes on each side, until cooked through and the center reaches 165°F (74°C).
  5. Immediately top each chicken breast with one slice of mozzarella.
  6. Serve the grilled chicken with the avocado salsa.

Discard marinade that has been in contact with raw chicken. Dice the avocado shortly before serving so the salsa stays fresh in color and texture.
