Ingredients:
5 eggs
1/2 cup egg whites
1 cup chopped ham
3/4 cup reduced-fat shredded mozzarella or cheddar
1/2 cup chopped tomatoes (optional)
Salt and pepper
Olive oil spray
Directions:
Preheat oven to 375°F (190°C). Spray a square baking dish with oil.
In a bowl, whisk eggs and egg whites with salt and pepper.
Mix in ham, cheese, and tomatoes.
Pour into dish and bake for 30–35 minutes.
Let cool slightly before cutting into squares.
