Slow Cooker Chicken Taco Soup

This slow-cooker taco soup combines ground chicken, tomatoes, peppers, corn, and taco seasoning. It makes twelve one-cup servings.

Ingredients

  • 1 pound ground chicken, weighed raw
  • 3½ cups chicken broth
  • 1½ cups tomato sauce
  • 1 (28-ounce) can diced tomatoes
  • 1 cup diced peppers, such as red and green
  • 1 cup diced red onion
  • 1 cup frozen corn
  • 2 garlic cloves, diced
  • 1 (30-gram) package taco seasoning
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste

Instructions

  1. Cook the ground chicken in a frying pan until it reaches 165°F (74°C), then drain it.
  2. Add the tomato sauce, diced tomatoes, and chicken broth to the slow cooker.
  3. Stir in the cooked chicken, peppers, red onion, corn, and garlic.
  4. Add the taco seasoning, onion powder, salt, and black pepper. Mix well.
  5. Cover and cook on high for 4 hours or on low for 7–8 hours.

Yield

Makes 12 one-cup servings.

Storage

The cooled soup can be frozen.
