Ingredients

1 pound lean turkey or chicken breakfast sausage (about 12 points for lean turkey sausage)

4 large eggs, lightly whisked (8 points)

1/2 cup reduced-fat grated cheddar cheese (8 points)

1 cup reduced-fat Bisquick or other low-fat baking mix (16 points)

Instructions

Prepare the Oven and Muffin Pan:

Preheat your oven to 375°F (190°C).

Grease a 12-cup muffin pan or line it with muffin liners.

Cook the Sausage: 3. In a large skillet, cook the breakfast sausage over medium heat until browned and fully cooked. Break it into small crumbles as it cooks. 4. Once cooked, drain any excess fat and set aside to cool slightly.

Mix the Ingredients: 5. In a large mixing bowl, combine the lightly whisked eggs, reduced-fat grated cheddar cheese, and reduced-fat baking mix. 6. Add the cooked sausage to the mixture and stir until all ingredients are well combined.

Fill the Muffin Pan: 7. Divide the mixture evenly among the 12 muffin cups. Each cup should be about 3/4 full.

Bake the Muffins: 8. Place the muffin pan in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Cool and Store: 9. Remove the muffins from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely. 10. Once cooled, store the muffins in an airtight container in the refrigerator for up to a week or freeze them for longer storage.
