  • 2 cups reduced-fat shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1/2 cup cooked black beans (optional)
  • 1/2 cup corn kernels (optional)
  • 1/2 red bell pepper, diced
  • 1/2 onion, diced
  • 1 jalapeño, sliced (optional)
  • 4 whole wheat or low-carb tortilla
  • 2 tbsp butter, for cooking

Optional Toppings:

  • Non-fat Sour cream
  • Guacamole
  • Salsa
  • Chopped cilantro
  • Lime wedges

Instructions:

  1. Prepare the Steak:
