Pizza-Stuffed Bell Pepper Poppers

Mini bell pepper halves replace a bread crust in these pizza-inspired poppers. The filling combines cooked ground chicken or turkey with marinara and Italian seasoning, then a small amount of mozzarella melts over the top in the air fryer.

Ingredients

  • 1/2 cup cooked ground chicken or turkey
  • 2 tablespoons sugar-free marinara
  • 1 tablespoon shredded mozzarella
  • Pinch of Italian seasoning
  • Mini bell peppers, halved

Fill and Air Fry

  1. Preheat the air fryer as appropriate for the appliance and set it to 390°F.
  2. Mix the cooked ground chicken or turkey with the marinara and Italian seasoning.
  3. Spoon the filling into the halved mini bell peppers.
  4. Top with the shredded mozzarella.
  5. Air fry at 390°F for 8 minutes, until the cheese is melted and golden and the cooked poultry filling reaches 165°F (74°C).

Portioning Notes

Fill as many mini pepper halves as the measured meat mixture will support. Choose peppers of similar size so they soften at a comparable pace.

Use cooked ground chicken or turkey as listed; this short air-fryer step is for heating the filling, softening the peppers, and melting the cheese, not cooking raw poultry from scratch. Arrange the peppers in a single layer so hot air can circulate around them.
