Ingredients:

Instructions:

Step 1: Prepare the Base

  1. Mix the Base Ingredients: In a small bowl, combine the peanut butter, honey (or sweetener), vanilla extract, and almond milk. Stir until the mixture is smooth and creamy. This will form the bottom layer of your “Snickers.”
  2. Fill the Molds: Spoon the peanut butter mixture into silicone molds, ice cube trays, or a parchment-lined tray. Aim for a small, bite-sized portion (about 1-2 tablespoons each). Place the molds in the freezer for about 15-20 minutes to firm up.

Step 2: Prepare the Caramel Layer

  1. Blend the Caramel: Once the dates have softened, drain the water and blend the dates, peanut butter, water, and salt in a food processor until smooth and creamy, resembling a caramel texture.
  2. Layer the Caramel: Remove the frozen peanut butter base from the freezer, and top each one with a small amount of the date caramel layer. Return to the freezer for another 15-20 minutes to allow the caramel layer to firm up.

Step 3: Coat with Chocolate

  1. Melt the Chocolate: In a microwave-safe bowl, melt the sugar-free chocolate chips and coconut oil together. Heat in 20-30 second intervals, stirring after each, until fully melted and smooth.
  2. Coat with Chocolate: Once the caramel layer is set, dip each piece into the melted chocolate, making sure it’s fully coated. You can drizzle extra chocolate on top if desired. Return them to the freezer for 10-15 minutes to harden the chocolate coating.
