Ingredients:

1 lb ground beef (85% lean)

1 cup shredded cheddar cheese

3 large eggs

1/2 cup almond flour

1/4 cup finely chopped onion

1 tsp garlic powder

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp paprika

1/4 cup chopped dill pickles (optional but delicious)

1 tbsp olive oil (for greasing)

Instructions:

Preheat your oven to 350°F (175°C) and grease a muffin tin with olive oil.

Cook the ground beef: In a large skillet, brown the ground beef over medium heat. Break it up with a spoon and cook until no longer pink. Drain any excess fat.

Mix the muffin batter: In a bowl, whisk the eggs. Add in the shredded cheddar cheese, almond flour, chopped onions, garlic powder, oregano, salt, pepper, and paprika. Mix well to combine.

Add the beef: Once the beef is cooked and slightly cooled, stir it into the egg mixture along with the chopped pickles (if using). Mix until everything is evenly distributed.

Fill the muffin tin: Spoon the mixture into the greased muffin tin, filling each muffin cup about 3/4 full.

Bake: Place the muffin tin in the oven and bake for 20-25 minutes or until the tops are golden and a toothpick comes out clean.

Serve and enjoy! Once out of the oven, let them cool for a few minutes before serving.
