Ingredients:

  • 2 lbs (about 4) boneless, skinless chicken breasts
  • 1 cup salsa (sugar-free for 0 points)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp salt (optional)

Instructions:

  1. Prepare the Crock Pot: Spray the slow cooker with a little non-stick spray.
  2. Add Ingredients: Place the chicken breasts in the crock pot. Sprinkle the seasonings over the chicken, then pour the salsa on top.
  3. Cook: Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender and easily shredded.
  4. Shred the Chicken: Use two forks to shred the chicken in the crock pot, mixing it with the salsa.
  5. Serve: Enjoy in lettuce wraps, over cauliflower rice, or on its own!
