This cold pea salad combines thawed green peas, red onion, sharp cheddar, and crisp bacon with a sweet and tangy sour cream dressing. Chill it for at least one hour before serving.
Ingredients
- ½ cup sour cream
- ¼ cup mayonnaise
- 1 tablespoon granulated sugar
- 2 teaspoons apple cider vinegar
- ¼ teaspoon kosher salt
- ⅛ teaspoon black pepper
- 4 cups frozen peas, thawed
- ⅓ cup diced red onion
- ¾ cup sharp cheddar cheese, cut into cubes about the size of the peas
- 8 slices bacon, cooked until crisp and crumbled
Instructions
- Whisk the sour cream, mayonnaise, sugar, apple cider vinegar, salt, and pepper in a large bowl.
- Add the peas, red onion, cheddar, and bacon. Stir gently until everything is coated.
- Cover and refrigerate for at least 1 hour.
- Garnish with a little reserved crisp bacon if desired, then serve cold.
Storage
Keep leftovers in an airtight container in the refrigerator for up to three days. Freezing is not recommended because the dressing can separate and the peas and bacon can soften after thawing.
