Choosing the right bananas: the more overripe the bananas the better. If they have a few brown spots then they’re perfect.
Sweetener: I used Golden Earth Brown Granulated Sweetener. It looks just like brown sugar and has the same consistency and taste but without the calories.
Ingredients
- 3 ripe bananas, mashed
- 2 eggs
- 1 cup blended oats (blend rolled oats into oat flour)
- 1/2 cup plain nonfat Greek yogurt
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- Pinch of salt
- Optional: 1–2 tbsp zero-calorie sweetener if you like it sweeter
Instructions
- Preheat oven to 350°F (175°C).
- Spray a loaf pan with nonstick spray or line with parchment paper.
- In a bowl, mash bananas until smooth.
- Mix in eggs, yogurt, and vanilla.
- Add blended oats, baking powder, baking soda, cinnamon, and salt. Stir until combined.
- Pour batter into loaf pan.
- Bake for 40–50 minutes or until a toothpick comes out clean.
- Let cool before slicing.

Tips Add extra cinnamon for stronger banana bread flavor A few sugar-free chocolate chips can be added for slightly more points. Tastes amazing chilled in the fridge overnight
