Finely chop ½ cup cooked cauliflower or courgette until mash-soft. Mix with ½ cup shredded chicken, 1 tbsp Greek yogurt, 1 tbsp Fage yogurt, and 1 tbsp light mozzarella. Spread in a small dish and bake 15–18 minutes until bubbling. Scoop and eat. It feels like comfort food but sneaks veg in without texture issues.
