Lemon zest, lemon juice, Greek yogurt, and butter give this 12-slice loaf a bright citrus flavor and moist crumb. It bakes in a 9-by-5-inch loaf pan for 45–50 minutes.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons grated lemon zest
- 2 tablespoons freshly squeezed lemon juice
- 1 cup plain Greek yogurt
Instructions
- Preheat the oven to 350°F. Grease a 9-by-5-inch loaf pan.
- Whisk the flour, sugar, baking powder, and salt together in a bowl.
- In a separate bowl, whisk the softened butter, eggs, lemon zest, and lemon juice.
- Add the Greek yogurt to the wet mixture and mix until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing only until combined.
- Transfer the batter to the prepared pan.
- Bake for 45–50 minutes, until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool before cutting it into 12 slices.
Mixing only until the flour disappears helps avoid a dense loaf. Letting the baked loaf cool before slicing also gives the crumb time to set cleanly.
