Lemon Loaf

Lemon zest, lemon juice, Greek yogurt, and butter give this 12-slice loaf a bright citrus flavor and moist crumb. It bakes in a 9-by-5-inch loaf pan for 45–50 minutes.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 teaspoons grated lemon zest
  • 2 tablespoons freshly squeezed lemon juice
  • 1 cup plain Greek yogurt

Instructions

  1. Preheat the oven to 350°F. Grease a 9-by-5-inch loaf pan.
  2. Whisk the flour, sugar, baking powder, and salt together in a bowl.
  3. In a separate bowl, whisk the softened butter, eggs, lemon zest, and lemon juice.
  4. Add the Greek yogurt to the wet mixture and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing only until combined.
  6. Transfer the batter to the prepared pan.
  7. Bake for 45–50 minutes, until a toothpick inserted into the center comes out clean.
  8. Allow the loaf to cool before cutting it into 12 slices.

Mixing only until the flour disappears helps avoid a dense loaf. Letting the baked loaf cool before slicing also gives the crumb time to set cleanly.
