Ingredients:

  • 2 cups non-fat cottage cheese or Greek yogurt
  • 2 scoops vanilla protein powder
  • 2 tsps vanilla extract
  • 3 bananas, divided
  • 2-3 Tbsps zero-calorie sweetener

For the overnight oats:

  • 2 cups old fashioned oats
  • 1/4 cup chia seeds
  • 2 cups milk of choice
  • 2/3 cup Greek yogurt

Instructions

  1. Make your overnight oats the night before or at least 4 hours before preparing your banana pudding.
  2. To make your overnight oats, combine the ingredients well, let sit for 5 minutes then give it another really good stir. Cover and place in the refrigerator overnight or at least 4 hours until thickened.

Once ready to prepare:

  1. In a high-speed blender add in the cottage cheese, protein powder, vanilla, 2 bananas (reserving one for topping), zero-calorie sweetener to taste. Blend until smooth.
  2. To assemble your cups, add a base layer of overnight oats, then 2-3 spoonful’s
  3. of banana pudding and repeat evenly and equally for all 4 parfaits.
  4. Top with remaining banana slices and enjoy!
