Ingredients:
- 2 cups non-fat cottage cheese or Greek yogurt
- 2 scoops vanilla protein powder
- 2 tsps vanilla extract
- 3 bananas, divided
- 2-3 Tbsps zero-calorie sweetener
For the overnight oats:
- 2 cups old fashioned oats
- 1/4 cup chia seeds
- 2 cups milk of choice
- 2/3 cup Greek yogurt
Instructions
- Make your overnight oats the night before or at least 4 hours before preparing your banana pudding.
- To make your overnight oats, combine the ingredients well, let sit for 5 minutes then give it another really good stir. Cover and place in the refrigerator overnight or at least 4 hours until thickened.
Once ready to prepare:
- In a high-speed blender add in the cottage cheese, protein powder, vanilla, 2 bananas (reserving one for topping), zero-calorie sweetener to taste. Blend until smooth.
- To assemble your cups, add a base layer of overnight oats, then 2-3 spoonful’s
- of banana pudding and repeat evenly and equally for all 4 parfaits.
- Top with remaining banana slices and enjoy!
