Ingredients:
● 6 large eggs, hard-boiled and peeled
● 3 tablespoons cream cheese, softened
● 2 tablespoons Greek yogurt
● 1 teaspoon Dijon mustard
● 1 small jalapeño, finely diced (seeds removed for less heat)
● ¼ cup shredded cheddar cheese
● 2 strips crispy bacon, crumbled
● ¼ teaspoon garlic powder
● Salt & pepper, to taste
● ¼ cup panko breadcrumbs (for topping)
● Sliced jalapeño, for garnish
Directions:
I. Prepare the Eggs:
Slice the hard-boiled eggs in half and remove the yolks into a bowl.
Mash the yolks with a fork until smooth.
II. Make the Filling:
3. Add cream cheese, Greek yogurt, Dijon mustard, jalapeño, shredded cheddar, bacon, garlic powder, salt, and pepper to the yolks. Mix until creamy.
III. Assemble the Eggs:
4. Spoon or pipe the filling back into the egg whites.
IV. Add Crunchy Topping:
5. Panko breadcrumbs sprinkle over each egg.
6. Broil on high for 1-2 minutes until golden brown (optional but adds a crispy touch).
