- 2 cups fresh or frozen raspberries
- 1 (0.3 oz) package sugar-free raspberry gelatin (Jell-O brand or similar)
- 1 cup boiling water
- 1 cup cold water
- ½ cup fat-free plain Greek yogurt
- 1 tsp vanilla extract (optional)
Instructions
1. Prepare the Gelatin
- In a mixing bowl, dissolve sugar-free raspberry gelatin in 1 cup boiling water, stirring until fully dissolved.
- Stir in 1 cup cold water and mix well.
2. Blend the Mixture
- In a blender or food processor, blend raspberries, Greek yogurt, and vanilla extract (if using) until smooth.
- Add the prepared gelatin mixture and blend again until fully combined.
3. Chill Until Set
- Pour the mixture into 4 small dessert cups or ramekins.
- Refrigerate for at least 2-3 hours or until set.
4. Serve & Enjoy
- Garnish with extra fresh raspberries or a dollop of fat-free whipped topping (optional, may add points).
