Ingredients (Serves 4)

  • 2 cups fresh or frozen raspberries
  • 1 (0.3 oz) package sugar-free raspberry gelatin (Jell-O brand or similar)
  • 1 cup boiling water
  • 1 cup cold water
  • ½ cup fat-free plain Greek yogurt
  • 1 tsp vanilla extract (optional)

Instructions

1. Prepare the Gelatin

  • In a mixing bowl, dissolve sugar-free raspberry gelatin in 1 cup boiling water, stirring until fully dissolved.
  • Stir in 1 cup cold water and mix well.

2. Blend the Mixture

  • In a blender or food processor, blend raspberries, Greek yogurt, and vanilla extract (if using) until smooth.
  • Add the prepared gelatin mixture and blend again until fully combined.

3. Chill Until Set

  • Pour the mixture into 4 small dessert cups or ramekins.
  • Refrigerate for at least 2-3 hours or until set.

4. Serve & Enjoy

  • Garnish with extra fresh raspberries or a dollop of fat-free whipped topping (optional, may add points).
