Ingredients:
1 small ripe avocado
1 5-ounce can of tuna in water, drained
1 tablespoon finely minced shallot
1 tablespoon fresh lime juice
1 tablespoon extra virgin olive oil
1/4 cup Italian parsley, chopped
Salt and pepper to taste
Directions:
1 In a small bowl, mix olive oil, lime juice, shallot, and half the parsley.
2 Drain the tuna well and add it to the bowl.
3 Cube or mash the avocado, then mix it in.
4 Stir in the remaining parsley.
5 Taste and adjust salt and pepper as needed.
