This chilled pea salad combines cucumber, red bell pepper, red onion, and fresh herbs with a creamy lemon-Dijon yogurt dressing.
Salad Ingredients
- 2 cups frozen peas, thawed
- 1 cup diced cucumber
- ½ cup diced red bell pepper
- ¼ cup finely chopped red onion
- 2 tablespoons chopped fresh dill or parsley
Dressing Ingredients
- ¼ cup non-fat Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or sugar substitute
- Salt and pepper, to taste
Instructions
- Combine the thawed peas, cucumber, red bell pepper, red onion, and dill or parsley in a large bowl.
- Whisk the Greek yogurt, lemon juice, Dijon mustard, honey or sugar substitute, salt, and pepper in a small bowl until smooth.
- Pour the dressing over the salad and toss gently until evenly coated.
- Cover the bowl or transfer the salad to an airtight container. Refrigerate for at least 1 hour.
- Toss again and serve cold. Garnish with additional chopped herbs if desired.
