Summer Pea and Cucumber Salad

This chilled pea salad combines cucumber, red bell pepper, red onion, and fresh herbs with a creamy lemon-Dijon yogurt dressing.

Salad Ingredients

  • 2 cups frozen peas, thawed
  • 1 cup diced cucumber
  • ½ cup diced red bell pepper
  • ¼ cup finely chopped red onion
  • 2 tablespoons chopped fresh dill or parsley

Dressing Ingredients

  • ¼ cup non-fat Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or sugar substitute
  • Salt and pepper, to taste

Instructions

  1. Combine the thawed peas, cucumber, red bell pepper, red onion, and dill or parsley in a large bowl.
  2. Whisk the Greek yogurt, lemon juice, Dijon mustard, honey or sugar substitute, salt, and pepper in a small bowl until smooth.
  3. Pour the dressing over the salad and toss gently until evenly coated.
  4. Cover the bowl or transfer the salad to an airtight container. Refrigerate for at least 1 hour.
  5. Toss again and serve cold. Garnish with additional chopped herbs if desired.

Return leftovers to the refrigerator promptly.
