Ingredients:

For the Dressing:

  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (or sugar substitute for fewer points)
  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad: In a large mixing bowl, combine the thawed peas, diced cucumber, diced red bell pepper, finely chopped red onion, and chopped fresh dill or parsley. Toss gently to mix.
  2. Prepare the Dressing: In a small bowl, whisk together the non-fat Greek yogurt, lemon juice, Dijon mustard, honey (or sugar substitute), salt, and pepper until smooth and well combined.
