Ingredients:
* For the Salmon Meatballs:
* 1 lb salmon fillet, skin removed and finely chopped
* 1/2 cup breadcrumbs
* 1 egg, lightly beaten
* 2 tbsp fresh parsley, chopped
* 1 tsp garlic powder

* Salt and pepper to taste
* 1 tbsp olive oil (for baking)
* For the Avocado Sauce:
* 1 ripe avocado
* 1/4 cup non-fat sour cream
* 1 tbsp lemon juice
* 1 clove garlic, minced
* Salt and pepper to taste
Instructions:
1. Preheat & Prep: Preheat your oven to 375°F (190°C). Lightly grease a baking sheet with olive oil.
2. Combine Ingredients: In a bowl, combine the chopped salmon, breadcrumbs, beaten egg, parsley, garlic powder, paprika, salt, and pepper. Mix gently until everything is well combined.
3. Form Meatballs: Roll the mixture into small meatballs, about 1-inch in diameter.
4. Bake: Place the meatballs on the prepared baking sheet and bake for 15-20 minutes, or until they are cooked through and slightly browned.
5. Make Avocado Sauce: While the meatballs are baking, prepare the avocado sauce. In a food processor or blender, combine the avocado, sour cream, lemon juice, minced garlic, salt, and pepper. Blend until smooth and creamy.
6. Serve: Once the meatballs are baked, serve them warm with a generous dollop of the creamy avocado sauce.
