Ingredients:

For the Chia Pudding Layer:

1/4 cup (40g) chia seeds

1 1/2 cups (360ml) almond milk

2 tablespoons sugar substitute

1/2 teaspoon vanilla extract

For the Raspberry Layer:

1 cup (150g) fresh or frozen raspberries

1 tablespoon (15ml) sugar substitute

1 tablespoon (15ml) water

For the Creamy “Cheesecake” Layer:

1 cup (240g) non-fat cream cheese

1/4 cup (60ml) Greek yogurt

2 tablespoons (30ml) sugar substitute

1/2 teaspoon lemon juice optional

Directions:

1. Prepare the chia pudding: In a bowl or jar, whisk together the chia seeds, almond milk, 2 tablespoons sugar substitute and vanilla extract. Let sit for 5-10 minutes, stir, then refrigerate for at least 4 hours or overnight.

2. Prepare the raspberry layer: In a small saucepan, combine the raspberries, optional 1 tablespoon sugar substitute and water. Cook over medium heat for 5-7 minutes, stirring occasionally, until the raspberries break down and the mixture thickens slightly into a sauce. Let cool completely. For a smoother sauce, you can mash the berries or blend briefly.

3. Prepare the creamy layer: In a bowl, cream cheese, Greek yogurt, 2 tablespoons sugar substitute and lemon juice (if using) until smooth and creamy.

4. Assemble the parfaits: In serving glasses or jars, layer the cooled raspberry sauce, creamy “cheesecake” mixture, and chia pudding. Repeat the layers.

5. Refrigerate for at least 30 minutes before serving to allow the layers to set slightly.
