Ingredients:
4 Lge eggs
1/4 cup coconut flour
1/4 cup Almond Flour
1/2 cup monk fruit (white )sweetener
1/4 Fresh Lemon juice
1 Tbsp Lemon zest
Pinch salt
1tsp baking powder
1/2 tsp vanilla
1/4 cup non-fat whipped cream
Instructions:
Preheat oven 180 deg
Grease & line 9inch cake tin
*Lge bowl beat eggs until light & fluffy
*FOLD in Flours, sweetener, juice, zest, salt, vanilla, baking powder..
*In a separate small bowl beat creamuntil forms peaks
* Fold cream through mixture
Combine well
Pour mixture into prepared Tin, smooth out mixture
Bake for 20-30 min (depends on your oven)
Let cake COMPLETELY cool in tin before turning out.
Frosting..
I made up one:
1/4 cup non-fat creamed cheese
Powdered monk fruit sweetener
Juice of 1/2 lemon (not to much just to your taste)
Little lemon zest
Beat well together ,top cake when cold enough
