Ingredients:
2 boneless skinless chicken breasts
Salt and pepper to taste
1 tbsp olive oil
1 avocado, sliced
4 slices reduced-fat cheese (Swiss, cheddar, or provolone)
4 slices bread (sourdough or ciabatta)
2 tbsp Greek yogurt
1 tbsp Dijon mustard
1 small red onion, thinly sliced
1 tomato, sliced
Butter or olive oil for grilling
Directions:
1. Season chicken and cook in olive oil over medium-high heat for 6-7 minutes per side until no longer pink. Rest, then slice.
2. Prepare avocado and cheese.
3. Spread Greek yogurt and Dijon mustard on each bread slice.
4. Assemble sandwiches with chicken, avocado, cheese, onion, and tomato. Top with bread, Greek yogurt side down.
5. Grill in a buttered skillet over medium heat for 3-4 minutes per side until crispy and melted.
6. Cool slightly before slicing. Serve warm.
