These no-bake bites combine almond flour, flax, coconut oil, cinnamon, vanilla, and sweetener. Roll the 13 portions in a cinnamon-sweetener coating before serving.
Ingredients
- 1¼ cups ready-to-eat or heat-treated almond flour
- 2 tablespoons coconut oil, melted
- 1 tablespoon ground flaxseed
- 2 tablespoons water
- ¼ cup granulated sweetener, such as monk fruit, coconut sugar, maple sugar, or white sugar
- 2 teaspoons cinnamon
- ½ teaspoon vanilla extract
- 1 pinch pink salt
- 1 tablespoon of the same granulated sweetener
- ½ teaspoon cinnamon, for coating
Instructions
- Mix the ground flaxseed with the water and set aside for a few minutes to thicken.
- Combine the almond flour, salt, and 2 teaspoons cinnamon in a mixing bowl.
- Add the ¼ cup granulated sweetener, melted coconut oil, and vanilla to the flax mixture. Whisk together.
- Pour the wet mixture over the dry ingredients and mix well.
- In a small bowl, combine the remaining 1 tablespoon of the chosen granulated sweetener and ½ teaspoon cinnamon.
- Use a cookie scoop to divide the dough into 13 portions. Roll each one smooth between your hands.
- Roll each bite in the cinnamon-sweetener mixture to coat.
Storage
Store in an airtight container at room temperature for up to one week, refrigerate for up to two weeks, or freeze for up to two months.
