2 cups jicama, peeled and julienned
1 cup cucumber, thinly sliced
1/2 cup carrots, julienned
1/4 cup red onion, thinly sliced
1/4 cup fresh cilantro, chopped
Juice of 2 limes
1 tablespoon olive oil
1 teaspoon chili powder or TajΓ­n
Salt and pepper to taste
Optional: diced mango or pineapple for sweetness

In a large bowl, combine jicama, cucumber, carrots, red onion, and cilantro.
In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper.
Pour the dressing over the salad and toss until everything is evenly coated.
Chill in the refrigerator for at least 15 minutes before serving.
Optional: Fold in diced mango or pineapple for a tropical twist. Serve cold.
