Chicken Vegetable Salad

This  chicken veggie  salad is a complete make-ahead lunch with tender chicken, crisp vegetables, chickpeas, and a lemon-herb dressing. Roasting the chicken separately gives it a dependable texture and eliminates the unsafe shortcut of heating  food in an ordinary storage bag. Cool the chicken briefly before assembling so the greens stay crisp.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon fine salt, divided
  • 1/4 teaspoon black pepper
  • 5 cups chopped romaine
  • 1 cup halved cherry tomatoes
  • 1 cup diced cucumber
  • 1 bell pepper, diced
  • 1 cup canned chickpeas, rinsed and drained
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 2 tablespoons chopped parsley

Method

  1. Heat the oven to 425°F. Pat the chicken dry. Rub it with 1 teaspoon olive oil, garlic powder, paprika, 1/4 teaspoon salt, and pepper.
  2. Place the chicken on a rimmed baking sheet and roast for 18 to 24 minutes, depending on thickness. Check the thickest part with an instant-read thermometer; it must reach 165°F.
  3. Rest the chicken for 5 minutes, then cut it into bite-size pieces. Let it cool until just warm.
  4. Combine the romaine, tomatoes, cucumber, bell pepper, and chickpeas in a large bowl.
  5. Whisk the remaining olive oil with the lemon juice, mustard, honey, parsley, and remaining salt. Add the chicken and dressing to the vegetables and toss gently.

Useful preparation cues

Chicken breasts cook most evenly when they have a similar thickness. If one end is much thicker, lightly pound it before seasoning. Resting after roasting lets the juices redistribute. Drying the chickpeas and washed vegetables also matters: excess water dilutes the dressing and makes the greens wilt quickly.
