Raspberry Chocolate Oat Squares

Oats, raspberry jam, and peanut butter form the base of these no-bake bars, with melted chocolate spread over the top. Preparation takes about 10 minutes, followed by one hour of chilling, and the batch makes nine servings.

Ingredients

  • 1 cup oats
  • ¼ cup raspberry jam
  • ¼ cup peanut butter
  • ¼ cup melted chocolate

Instructions

  1. Add the oats, raspberry jam, and peanut butter to a mixing bowl.
  2. Stir until the oats are evenly coated and the mixture holds together.
  3. Transfer the oat mixture to a pan and press it into an even layer, paying particular attention to the corners.
  4. Spread the melted chocolate across the top of the oat layer.
  5. Chill for one hour.
  6. Once firm, slice into nine squares and serve.

Press and Chill

Lining the pan makes the chilled slab easier to lift out. Press firmly with the back of a spoon or a flat-bottomed measuring cup, especially at the edges. A well-compressed oat layer is less likely to crumble when cut.

Spread the chocolate while it is fully melted, without pushing it down into the oats. Chill for the full hour. If the chocolate becomes very firm, let the slab stand briefly before cutting so the topping is less likely to crack. The sweetness and seed content will vary with the raspberry jam used. Keep the finished bars chilled until close to serving.
