Strawberry Yogurt Gelatin

Sugar-free strawberry gelatin and plain Greek yogurt make a simple chilled dessert with a creamy, jiggly texture. The hot gelatin mixture needs a short cooling period before the yogurt is whisked in.

Ingredients

  • 1 box sugar-free strawberry Jello
  • 1 cup plain fat-free Greek yogurt
  • 1 cup water
  • Fat-free whipped topping, for serving (optional)

Dissolve, cool, and chill

  1. Bring 1 cup of water to a boil.
  2. Pour the boiling water over the sugar-free strawberry gelatin. Stir until the powder has completely dissolved.
  3. Let the gelatin mixture stand for about 10 minutes so it cools slightly.
  4. Add the plain fat-free Greek yogurt. Whisk until the yogurt is fully incorporated and the mixture looks uniform, with no visible streaks.
  5. Transfer the mixture to the refrigerator and chill until it is set and jiggly.
  6. Serve cold, adding a little fat-free whipped topping if desired.

The 10-minute cooling step separates dissolving the gelatin from adding the dairy. Whisk the yogurt in gradually and continue until the mixture is smooth before refrigerating it to set.
