White Chocolate Macadamia Nut Cookies

These cookies combine white chocolate chips with chopped macadamia nuts and almond and vanilla extracts. The recipe makes 24 cookies.

Ingredients

  • 1¼ cups white whole-wheat flour
  • ½ cup light butter-like spread, at room temperature
  • ½ cup brown sugar
  • 1 egg
  • ½ cup white chocolate chips
  • ⅓ cup roughly chopped raw macadamia nuts
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon vanilla extract
  • ¼ teaspoon almond extract

Instructions

  1. Preheat the oven to 350°F.
  2. Mix the butter-like spread and brown sugar in a medium bowl until smooth. Add the egg, vanilla, and almond extract.
  3. In a large bowl, combine the flour, salt, and baking soda.
  4. Slowly stir the sugar mixture into the flour mixture until combined.
  5. Stir in the white chocolate chips and macadamia nuts.
  6. Drop tablespoon portions of dough onto a cookie sheet to make 24 cookies.
  7. Bake for 10 minutes, until the centers contain no wet dough and reach 160°F (71°C).
  8. Let the cookies rest on the sheet for 10 minutes, then transfer them to a wire rack to finish cooling.
