These cookies combine white chocolate chips with chopped macadamia nuts and almond and vanilla extracts. The recipe makes 24 cookies.
Ingredients
- 1¼ cups white whole-wheat flour
- ½ cup light butter-like spread, at room temperature
- ½ cup brown sugar
- 1 egg
- ½ cup white chocolate chips
- ⅓ cup roughly chopped raw macadamia nuts
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon vanilla extract
- ¼ teaspoon almond extract
Instructions
- Preheat the oven to 350°F.
- Mix the butter-like spread and brown sugar in a medium bowl until smooth. Add the egg, vanilla, and almond extract.
- In a large bowl, combine the flour, salt, and baking soda.
- Slowly stir the sugar mixture into the flour mixture until combined.
- Stir in the white chocolate chips and macadamia nuts.
- Drop tablespoon portions of dough onto a cookie sheet to make 24 cookies.
- Bake for 10 minutes, until the centers contain no wet dough and reach 160°F (71°C).
- Let the cookies rest on the sheet for 10 minutes, then transfer them to a wire rack to finish cooling.
