This baked chicken is topped with mozzarella and served with a simple onion gravy. The recipe makes two chicken breasts.
Ingredients
- 1 medium onion, sliced
- ½ cup plus 3 tablespoons low-sodium beef broth, divided
- 1 tablespoon flour
- 2 boneless, skinless chicken breasts
- Salt, black pepper, and Italian seasoning, to taste
- 2 ounces fat-free mozzarella cheese
- Nonstick cooking spray
Instructions
- Preheat the oven to 400°F.
- Coat a skillet with cooking spray. Add the onion and 3 tablespoons broth, then sauté until the onion is tender. Transfer the onion to a plate.
- Season the chicken with salt, pepper, and Italian seasoning. Brown it on both sides in the skillet, then set it aside.
- Return the onion to the skillet and sprinkle with the flour. Stir until the onion is coated.
- Add the remaining ½ cup broth and stir until the gravy thickens.
- Pour the onion gravy into a 9×13-inch baking dish and place the chicken on top.
- Top each chicken breast with 1 ounce mozzarella.
- Bake for 20 minutes, or until the thickest part of each breast reaches 165°F (74°C).
- Spoon the onion gravy over the chicken and serve.
