French Onion Chicken

This baked chicken is topped with mozzarella and served with a simple onion gravy. The recipe makes two chicken breasts.

Ingredients

  • 1 medium onion, sliced
  • ½ cup plus 3 tablespoons low-sodium beef broth, divided
  • 1 tablespoon flour
  • 2 boneless, skinless chicken breasts
  • Salt, black pepper, and Italian seasoning, to taste
  • 2 ounces fat-free mozzarella cheese
  • Nonstick cooking spray

Instructions

  1. Preheat the oven to 400°F.
  2. Coat a skillet with cooking spray. Add the onion and 3 tablespoons broth, then sauté until the onion is tender. Transfer the onion to a plate.
  3. Season the chicken with salt, pepper, and Italian seasoning. Brown it on both sides in the skillet, then set it aside.
  4. Return the onion to the skillet and sprinkle with the flour. Stir until the onion is coated.
  5. Add the remaining ½ cup broth and stir until the gravy thickens.
  6. Pour the onion gravy into a 9×13-inch baking dish and place the chicken on top.
  7. Top each chicken breast with 1 ounce mozzarella.
  8. Bake for 20 minutes, or until the thickest part of each breast reaches 165°F (74°C).
  9. Spoon the onion gravy over the chicken and serve.

Yield

Makes 2 chicken breasts.
