Vanilla Cream Cheese Frosting

This vanilla cream cheese frosting blends fat-free cream cheese with light margarine and sour cream. Cornstarch supports the texture before confectioners’ sugar is beaten in gradually. The recipe makes 16 servings.

Ingredients

  • 1 (8 oz) package fat-free cream cheese
  • 4 tablespoons (1/2 stick) light margarine
  • 2 tablespoons fat-free sour cream
  • 2 teaspoons pure vanilla extract
  • 1 tablespoon cornstarch
  • 1 cup confectioners’ sugar

Beat until smooth

  1. Place the cream cheese, light margarine, and sour cream in a large mixing bowl.
  2. Beat until the mixture is smooth and the three ingredients are fully combined.
  3. Add the vanilla extract and cornstarch. Mix again so the cornstarch is evenly dispersed.
  4. Gradually beat in the confectioners’ sugar rather than adding it all at once.
  5. Continue mixing until the frosting is smooth and ready to spread.

Scrape the bowl after each addition so no streaks of cream cheese or pockets of sugar remain. If using the frosting on a cake or cupcakes, make sure the baked item is completely cool before spreading it.
