- 1 cup fresh or frozen blueberries
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the oats, almond milk, water, sugar-free maple syrup, egg, baking powder, cinnamon, nutmeg, and salt in a large bowl.
- Stir until evenly mixed, then fold in the blueberries gently.
- Pour the mixture into a 9-by-9-inch baking dish.
- Bake for 35–40 minutes, until set, lightly golden, and 160°F (71°C) in the center.
- Cool briefly, cut into slices, and serve warm.
Cut the baked oatmeal into portions to suit the meal. Refrigerate leftovers promptly and reheat them to 165°F (74°C).
