These small chocolate muffins use a light, separated-egg batter and are finished with one chocolate-orange segment in each center. The recipe makes 12 muffins.
Ingredients
- 30 grams Morrisons cocoa powder
- 3 tablespoons granulated sweetener
- 3 large eggs, separated
- 1 teaspoon orange essence
- 1 tablespoon water
- 12 Terry’s Chocolate Orange mini segments
- Frylight or another cooking spray
Instructions
- Preheat the oven to 180°C.
- Lightly coat a 12-hole muffin tin with cooking spray.
- Mix the cocoa powder and sweetener in a bowl. Add the egg yolks, orange essence, and water, then mix until combined.
- In a separate clean bowl, whisk the egg whites to stiff peaks.
- Fold a spoonful of the whisked whites into the chocolate mixture to loosen it. Gently fold in the remaining whites.
- Divide the batter evenly among the 12 muffin holes and bake for 6 minutes.
- Remove the tin from the oven and press one chocolate-orange segment into the center of each muffin.
- Return the tin to the oven for 5 minutes, until the centers contain no wet batter and reach 160°F (71°C).
