Ingredients:
12 oz 96% lean ground beef
8 tsp chopped dill gherkins (pickles)
1 cup shredded lettuce
½ cup finely chopped onion
1 cup diced fresh tomatoes
8 tsp yellow mustard
Salt & black pepper, to taste
5 low-carb, high-fiber tortilla wraps
4 oz reduced-fat cheddar cheese, shredded
Instructions:
1 Cook the Beef:
Heat a non-stick skillet over medium heat.
Add lean ground beef and chopped onions with salt & pepper.
Cook until beef is browned and onions are softened. Drain any excess fat.
2 Assemble the Wraps:
Lay out a low-carb tortilla and spread mustard evenly.
Add cooked beef, cheddar cheese, pickles, lettuce, and tomatoes.
3 Fold & Toast:
Fold the tortilla into a hexagon shape, tucking in the sides.
Lightly spray a non-stick skillet with cooking spray.
Place the wrap seam-side down and cook on medium heat for 2-3 minutes per side until golden brown and crispy.
4 Serve & Enjoy:
Cut in half and serve with extra mustard or sugar-free ketchup for dipping!
