Ingredients:

– 1 lb beef sirloin or flank steak, thinly sliced

– 3 cups cooked and chilled rice (preferably day-old)

– 2 tablespoons vegetable oil

– 1 medium onion, diced

– 2 cloves garlic, minced

– 1 cup mixed vegetables (peas, carrots, and corn)

– 2 eggs, beaten

– 3 tablespoons soy sauce

– 1 tablespoon oyster sauce

– 1 teaspoon sesame oil

– 1/4 teaspoon black pepper

– 1/4 cup sliced green onions

– Optional garnish: Sesame seeds

Directions:

1. Prepare the Beef:

1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

2. Add the beef slices and cook for 2-3 minutes per side until browned. Remove and set aside.

2. Sauté the Aromatics and Vegetables:

1. In the same skillet, heat the remaining oil. Add the diced onion and garlic, sautéing for 1-2 minutes until fragrant.

2. Add the mixed vegetables and stir-fry for 2-3 minutes until tender.

3. Cook the Eggs:

1. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space.

2. Scramble the eggs until just set, then mix them into the vegetables.

4. Add the Rice and Sauces:

1. Add the chilled rice to the skillet, breaking up any clumps. Stir-fry for 3-4 minutes to heat through.

2. Drizzle with soy sauce, oyster sauce, sesame oil, and black pepper. Toss to coat the rice evenly.

5. Combine Everything:

1. Return the cooked beef to the skillet and toss with the rice and vegetables. Stir-fry for 1-2 minutes to combine all the flavors.

6. Garnish and Serve:

1. Top with sliced green onions and optional sesame seeds for garnish. Serve hot and enjoy this hearty and flavorful beef fried rice!
