Description
These soft, naturally sweet oatmeal muffins are made with just three simple ingredients and come out perfectly moist every time. They’re great for breakfast, meal prep, or a quick snack — and best of all, they’re 0 Weight Watchers points (depending on your plan). No sugar, no flour, and no guilt 💛
📝 Ingredients
- 4 very ripe bananas (the riper, the sweeter 🍌)
- 1 cup rolled oats (or quick oats)
- 1 tsp vanilla extract
👩🍳 Instructions (Step-by-step)
- Preheat your oven
- Set to 350°F (175°C)
- Line a muffin tin with paper liners or lightly spray with nonstick spray
- Mash the bananas
- In a bowl, mash until completely smooth
- Try to remove lumps — this helps the texture
- Add oats & vanilla
- Stir in oats and vanilla
- Mix well until everything is fully combined
- Let the mixture sit for 5 minutes so the oats soften
- (Optional texture step – recommended)
- For softer, cake-like muffins: blend the batter for a few seconds
- For more texture: leave as-is
- Fill muffin cups
- Divide evenly into 9–12 muffins
- Fill each about ¾ full
- Bake
- Bake for 12–15 minutes
- They’re done when the tops are set and a toothpick comes out clean
- Cool down
- Let them cool in the pan for 5 minutes
- Then transfer to a rack to cool completely
💡 Tips for Best Results
- Use very spotty bananas → natural sweetness + better flavor
- Don’t overbake — they can dry out quickly
- Store in fridge for up to 5 days or freeze for later ❄️
- Reheat 10–15 seconds in microwave = perfect texture again
