Ingredients:

For the Wraps:

2 large pita breads or flatbreads

1 1/2 cups cucumber, thinly sliced

1/2 cup cherry tomatoes, halved

1/4 small red onion, thinly sliced

1/2 cup crumbled feta cheese

1/4 cup chopped fresh parsley or mint

1 cup mixed greens or arugula

Optional: kalamata olives or sliced avocado

For the Lemon Tahini Sauce:

2 tbsp tahini

1 tbsp lemon juice

1 tsp lemon zest

1 tsp maple syrup or honey

1 tbsp water (or more for desired consistency)

1 small garlic clove, minced

Salt & black pepper, to taste

Directions:

Make the Lemon Tahini Sauce

In a small bowl, whisk together tahini, lemon juice, zest, maple syrup, garlic, salt, and pepper. Add water gradually until smooth and drizzleable.

Prep the Veggies

Slice cucumber, tomatoes, and onion. Chop herbs. Set aside.

Warm the Pitas

Lightly warm pita breads in a skillet or microwave until soft and pliable.

Assemble the Wraps

Lay out each pita and layer with greens, cucumber, tomatoes, onion, feta, and herbs. Drizzle generously with lemon tahini sauce.

Wrap & Serve

Fold or roll the pitas and serve immediately. Optionally secure with parchment or foil for easier handling.
