INGREDIENTS:
- 1 cup plain nonfat Greek yogurt.
- Half a cup of fat-free whipped topping, such as Cool Whip Free.
- Two teaspoons of readymade vanilla pudding mix without added sugar
- One teaspoon of vanilla extract
- 1/4 cup of unscented skim/almond-based milk
- Optional: Top with fresh berries or cinnamon.
INGREDIENT NOTES:
Greek yogurt:
- It provides rich protein, creamy smooth yogurt to the base. Healthy and low-point Greek yogurt with non-fat and non-sweetened plain Greek yogurt.
Whipped topping:
- A fat-free version such as Cool Whip Free helps the dessert to feel airy. It also provides sweetness without many calories.
Vanilla pudding mix:
- Adds more vanilla taste and thickens up so that it becomes like a mousse. The instant pudding is sugar-free and is best used on those low points & for quick preparation.
Vanilla extract:
- It boosts the natural vanilla flavor in each bite. Real and artificial vanilla are fine depending on what you have.
Milk:
- Almond milk or skim milk makes the concoction vinaigrette & blendable. Unsweetened and low-point milk should always be used.
Optional toppings:
- For added texture and color use sliced strawberries, blueberries/cinnamon. The toppings make it special while keeping the amount of calories down.
Directions:
- In a mixing dish, add Greek yoghurt & vanilla custard mix.
- Add the almond milk & stir till smooth.
- Fold in the whipped topping gradually till it’s completely incorporated.
- Stir in the vanilla essence.
- Spoon into four tiny dessert cups/bowls.
- Freeze it for at least 15 minutes ahead of distribution.
- Optional toppings include fruit or cinnamon.
