Ingredients:
1 cup reduced-fat cottage cheese
1/3 cup natural peanut butter
2–3 tbsp honey or maple syrup (adjust to taste)
1/2 tsp vanilla extract
Pinch of salt
Optional toppings: crushed peanuts, shaved dark chocolate, or a drizzle of peanut butter
Instructions:
Blend the Base:
In a high-speed blender or food processor, combine cottage cheese, peanut butter, honey (or maple syrup), vanilla extract, and salt.
Blend Until Smooth:
Blend for 1–2 minutes, scraping down the sides as needed, until the mixture is completely smooth and creamy.
Taste and Adjust:
Taste and adjust sweetness if needed. For a looser consistency, add a splash of milk and blend again.
Chill:
Transfer to serving bowls or jars and refrigerate for at least 30 minutes to chill and set.
Serve:
Top with desired garnishes before serving.
